Our Colombian Royal Select Mountain Water Process Decaf comes from small, family-owned farms nestled in Colombia’s famed “coffee triangle” — a region known for producing some of the most balanced and beloved coffees in the world. Here, harvest happens twice a year: the main crop between October and January, followed by the smaller mitaca harvest from April through June. This steady rhythm allows producers to maintain consistency and quality throughout the year.

Unlike large industrial operations, many of these farmers process their coffee at their own micro-wet mills. After washing, the beans are dried carefully — often on elevated tables or inside protective solar dryers that shield them from heavy rains while allowing slow, even drying. It’s hands-on, meticulous work that protects sweetness and clarity in the cup.

The caffeine is removed using the Mountain Water Process, a chemical-free method that gently extracts caffeine while preserving the bean’s natural flavor structure. What remains is everything you love about Colombian coffee — just without the caffeine.

We roast this Royal Select lot to a Light/Medium (Viennese/City) profile, allowing its natural character to shine. In the cup, you’ll find bright orange notes layered over smooth milk chocolate and warm brown sugar sweetness. The body is above average — round, comforting, and satisfying — while the acidity stays balanced and clean. It’s lively enough to keep things interesting, yet smooth enough for an evening cup.
